Cook the rice according to the packet instructions. Once cooked, cover and leave to steam while preparing the stir fry so the grains remain light and fluffy.

Pat the king prawns dry with kitchen paper and lightly season with freshly ground black pepper. Slice the green pepper into thin strips, trim the mangetout, slice the shiitake mushrooms.

Heat a large wok or frying pan over a high heat until very hot. Add the sliced mushrooms to the wok and cook for 2-3 minutes until lightly browned and beginning to soften.

Add the green pepper and mangetout, tossing continuously over a high heat for around 2 minutes so the vegetables remain crisp while developing a slight char around the edges.

Stir through the beansprouts and cook for a further minute before returning the prawns to the wok. Pour over the packet black bean stir fry sauce and stir well so every ingredient is evenly coated.

Continue cooking for another 2-3 minutes until the sauce has thickened slightly add the prawns for 2-3 minutes until warm through. Gently fold everything together.

Divide the rice between warm bowls before spooning the stir fry over the top. Then serve.
