Ingredients

  • 250 g paccheri pasta
  • 180 g cooked king prawns
  • 150 g frozen mussels
  • 150 g frozen clams
  • 150 g squid rings
  • 200 g cherry tomatoes
  • 400 g chopped tomatoes
  • 3 cloves garlic
  • 1 shallot
  • 100 ml dry white wine
  • 1 tbsp tomato puree
  • 2 tbsp fresh parsley
  • 2 tbsp extra virgin olive oil

Instructions

    Cook the paccheri pasta in well-salted boiling water until al dente, reserving a little pasta water before draining.

    Heat the olive oil in a large sauté pan and gently cook the finely diced shallot until softened. Add the garlic and cook for another minute.

    Stir in the tomato purée before adding the white wine. Simmer for 2-3 minutes until slightly reduced.

    Add the chopped tomatoes and halved cherry tomatoes, seasoning with the salt, black pepper. Simmer gently for around 10-15 minutes until the sauce thickens.

    Add the frozen mussels, frozen clams and squid rings. Simmer for around 4-5 minutes until fully heated through and the squid is tender.

    Stir in the cooked king prawns and cook for a further 1-2 minutes, just until warmed through. Avoid overcooking the prawns.

    Add the cooked pasta along with a splash of the reserved pasta water if needed. Toss everything together with the chopped parsley.

    Serve immediately with freshly cracked black pepper, extra parsley and a drizzle of good quality olive oil.
