worcestershire sauce

Combine the mayonnaise, ketchup, mustard, Worcestershire sauce, smoked paprika, maple syrup, and small sliced pickles in a bowl to make the burger sauce. Refrigerate until needed.

Thinly slice the onion and fry in the butter over a medium heat until soft and caramelised. Set aside.

Divide the minced beef into 8 equal portions and loosely roll into balls without compacting.

Heat a cast iron pan or griddle until very hot. Place two beef balls onto the pan and firmly smash them into thin patties. Season with salt and pepper.

Cook for around 2 minutes until a dark crust forms. Flip, top each patty with cheese and cook for another minute until melted.

Lightly toast the brioche buns in the same pan.

Spread burger sauce over both halves of each bun. Add shredded iceberg lettuce, two cheesy smash patties and caramelised onions.

Place the top bun on and serve immediately with seasoned fries.
