Ingredients

  • 1.2 kg Pork shoulder
  • 1 Orange
  • 2 Lime
  • 5 cloves Garlic
  • 2 tsp Cumin
  • 2 tsp Paprika
  • 2 tbsp Olive oil
  • 12 Corn tortillas

Instructions

    Preheat the oven to 160°C.

    Cut the pork shoulder into large chunks and season generously with salt, pepper, cumin and paprika.

    Heat olive oil in a large ovenproof casserole dish and brown the pork on all sides.

    Add crushed garlic, orange juice and lime juice to the pan.
  5. 5
    Cover tightly with a lid and cook slowly in the oven for 2½–3 hours until the pork becomes very tender.

    Remove the pork and shred it using two forks.
  7. 7
    Return the shredded pork to the pan juices and cook uncovered for another 15 minutes to crisp slightly.

    Serve in warm corn tortillas with salsa, onions and coriander.
